The wine

Paso Robles is by and large a hot region typically making big wines but this is one of the exceptions that prove the rule. The Margarita vineyard breaks from the norm as it is at about 350m elevation and only 15 miles from the Pacific; the combination of these factors have led people to believe it is too cool for Cabernet to fully ripen there. Chris feels very differently and sees these factors as essential in delivering the type of grapes he wants. The soils help further with the heavily calcareous nature of the uplifted former seabed here ensuring the finished wine retains good acidity.

This wine is made using spontaneous fermentation, delicate handling of the maceration and then 20 months aging in French oak using all old barrels. The finished wine is a classic Cali cab that in style more closely echoes the more elegant style of the 1970’s than the turbo charged wines of the last 20 years.
