The wine

Back in 2013 the Faure Pinot Noir was the very first wine made by Mick and Jeanine, pretty appropriate considering that they met at Wind Gap with Pax Mahle’s winery being such a top exponent of cool climate new world Pinot Noir. It’s true to say that Stellenbosch is not the first place that springs to mind when listing South Africa’s top Pinot regions but Mick amply demonstrates that the right site, handled in the right way can produce a wine that is the equal of other more lauded regions. Here the vineyard was planted out in 1997 on sand/shale over clay with Dijon clone 115.

In terms of the winemaking as per the Craven playbook this wine sees 100% whole cluster fermentation using natural yeasts. During the fermentation 1-2 light pumpovers per day are used to keep the juice moving and the must aerated without overworking the cap and extracting too much tannin. After around 10 days the finished wine is pressed and then send to age for 10 months in old oak prior to bottling unfined and unfiltered with nothing but a dash of SO2 added. This gives a super pure style of Pinot full of crunchy, fresh red fruits and elegant sappy tannin.
